Tolosa has been the birthplace of renowned bakeries. There are som family bakeries that continue the tradition of making high quality dessert, passed through generations.
Tejas & cigarrillos (Tiles and cigarettes)
Made with a butter and whole almond base, and covered with egg yolk and a pinch of lemon. Created by Luis Eceiza, from Eceiza bakery, upon Casa Julian carvery’s request, who needed a dessert to complete the T-bone steak menu.
Gorrotxas
Formerly known as Xaxu, these small cakes can be described as Basque macarons. A delicacy made of almonds, egg yolk and sugar.
Rafa Gorrotxategi’s chocolates
Master confectioner who creates artisan chocolate and all kinds of by-products with a lot of ingenuity and a mix of tastes and ingredients: nougats, chocolate bars, chocolate truffles…
Bombas (Bombs) from Eceiza
Delicious small cakes filled with custard, cream or Chantilly cream: the perfect sweet to finish any meal.

Eceiza
One of Tolosa’s oldest bakeries; opened in 1924. With two bakeries in Tolosa, Tejas & Cigarrillos (Tiles and Cigarettes) and Bombas (Bombs) are the most typical products, among others. You can have a hot chocolate in winter and artisan ice cream in summer.
Rafa Gorrotxategi
Gorrotxategi Family’s 3rd and 4th generations create completely original and modern products. They have received numerous international awards. Besides having a chocolate museum they also organise different workshops. It also includes a museum, a cafe and and a shop in the workshop.
