Cheese and dairy products

Cheesemaking is deeply rooted in Tolosaldea. Dozens of producers, farmhouses, companies and shepherds produce cheese from the milk of sheep, cows and goats that live in the meadows from the Aralar Natural Park to the Hernio area.

The traditional production of cheese is very varied: Idiazabal cheese from Latxa sheep, dairy cheeses, soft cheeses, cream cheeses, blue cheeses…

Other dairy products are also produced: yoghurts, cottage cheese, brines, ice creams…
